Biker's Stew |

Ingredients: |

- 1 Cup flour
- 1 Tbsp. salt
- 1 tsp. white pepper
- 1 tsp. dry mustard
- 1 tsp. paprika
- 1 tsp. basil
- 1 tsp. thyme
- 1 Tbsp Adolph's meat tenderizer

- 5 Lb. boneless beef steak
- 4 Tbsp. butter
- 1 1/2 Cups minced onions
- 1 Lb. small whole onions
(or, shallots), peeled
- 1 can strong beer (or ale)
- 1 (10 oz.) can Au Jus gravy
- Salt and Pepper to taste

| Create seasoned flour mix by combining flour, salt,
white pepper, dry mustard, paprika, basil, thyme, and tenderizer in a 1
1/2 quart sealable bowl (like a medium-sized TupperWare bowl). Cut
steak(s) into 1 inch cubes and coat with seasoned flour by shaking them
in the sealed bowl, a few cubes at a time. Reserve the remaining flour
mix. |
| Brown the minced onions with about 1 Tbsp. butter in a
5 Qt. dutch oven. Add 3 more Tbsp. butter and beef. Cook until beef is
browned. Remove from heat, add remaining seasoned flour mix, and stir.
Pour in the Au Jus gravy and beer, and top with small peeled onions. |
| Cover, and bake at 350 degrees for 2 hours. |
| I usually take 6 or 8 whole potatoes, top them with a
pat of butter, wrap them in aluminum foil, and bake them on the rack
next to the stew for a pretty complete meal. |
