Android's Kielbasa Jambalaya

Ingredients:

  • 1 Lb. of Kielbasa
  • 2 small onions (diced)
  • 1 stick Celery (chopped)
  • 1 Bell Pepper (seeded and diced)
  • 2 cloves Garlic (crushed)
  • 3 Tbsp. Butter
  • 1 Package Rice-a-Roni (Pilaf flavor)
  • 1 Lb. can Stewed Tomatoes
  • 6 oz. V-8 Juice
  • 6 oz. Mushrooms (sliced)
  • 1/2 tsp. Oregano
  • 1/2 tsp. Thyme
  • 1/2 tsp. Cayenne pepper
  • 1/2 tsp. Paprika
Cut the Kielbasa into bite size pieces and brown in a frying pan. Drain the Kielbasa on a bed of paper towels.
In a 5 Qt. pot, saute the onions, celery, bell pepper, and garlic in the butter until just cooked. Add the rice mix from the Rice-a-Roni package and brown it. Dump in the Stewed tomatoes, V-8 Juice, Rice-a-Roni flavor packet, mushrooms, and spices. Heat to boiling, then reduce heat, cover, and simmer (stirring occasionally) until the rice is cooked (about 20 minutes).
Stir in the Kielbasa and heat until warmed.
